Spinach
This ubiquitous green vegetable might seem delicate, but it has a lot in it that can keep you healthy and strong . It's loaded with iron, folate, beta carotene, lutein, various antioxidant compounds, and has about double the fiber of most other leafy greens.
This simple spinach salad is the perfect accompaniment to pretty much anything. We're all about sharp mustard vinaigrette paired with creamy feta and toasted almonds, but you can swap in your favorite cheese and nuts if you like!

5 oz. fresh spinach
1 apple, such as Honeycrisp, thinly sliced
1/3 c. crumbled feta
1/4 red onion, thinly sliced
1/4 c. sliced almonds, toasted

1/3 c. olive oil
3 tbsp. red wine vinegar
1 clove garlic or 1/2 shallot, minced
2 tsp. dijon mustard
Kosher salt
Freshly ground black pepper
