Portobello Mushrooms Delight on a Cauliflower Pizza Crust Recipe

Ingredients
- Cauliflower pizza crust from Trader Joe’s 120 Ca per serving
- 2 Portobello Mushrooms 44 ca
- Roasted garlic in olive oil Homemade ( I’ll share the recipe soon)
- Cilantro
- Chives (ciboulette)
- Greek yogurt low fat 2%
- Black pepper
- Roasted tomatillo salsa verde from Trader Joe’s
- Arugula
- Lemon
Instructions
- Place on a plate your cauliflower pizza crust and set it aside.
- Warm a pan with a drop of olive oil, add the 2 portobello mushrooms flat cap down, sprinkle some chives and cilantro.
- Let it roast for a little bit.
- Then flip it, and let it roast a little bit more. Flip it back flat cap down and stuff it with few roasted garlic cloves, chives and cilantro, squeeze a little lemon 🍋 over, then add Blk pepper.
- When ready, I take my pair of scissors (like I already told you, I love using my pair of scissors) and slice one of the mushrooms.
- Place the pieces in the center of your cauliflower pizza crust.
- Sprinkle some arugula on top and add a dash of plain Greek yogurt and some roasted tomatillo salsa.
- The final touch, add the other whole piece of Portobello mushroom on top face down, crack some Blk pepper over everything et voila!
