Pumpkin Butter

Because you've been there and done that with apple butter.
Pumpkin is best known for its place in the traditional holiday pie, but it's also a tasty addition to other baked goods, like breads and muffins, and to savory dishes, like curries and pastas. You'd do well to add it to as many of your meals as possible while it's in season. Pumpkin contains about double your daily requirement of vitamin A, as well as carotenoids like beta-carotene, which help protect your eyes, and which may also have a role in reducing cancer risk.

Pumpkin Butter Recipe

Ingredients

  • can pumpkin puree
  • 1/2 c. apple cider
  • 1/3 c. light brown sugar
  • 1/4 c. maple syrup
  • 1/4 tsp. ground ginger
  • 1 1/2 tsp. ground cinnamon
  • 1/4 tsp. nutmeg
  • 1 tsp. vanilla
  • Pinch salt

Instructions

  • Combine all ingredients in a small saucepan.
  • Simmer over medium-low heat, stirring occasionally, until the mixture has thickened, about 20 minutes.
  • Let cool completely.
  • Store in an airtight container in the refrigerator.
  • Spread pumpkin butter on toast, dollop over pancakes or serve with apples for dipping.
