Spinach Salad
This simple spinach salad is the perfect accompaniment to pretty much anything. We're all about sharp mustard vinaigrette paired with creamy feta and toasted almonds, but you can swap in your favorite cheese and nuts if you like!

Spinach Salad Recipe

Ingredients
- 5 oz. fresh spinach
- 1 apple, such as Honeycrisp, thinly sliced
- 1/3 c. crumbled feta
- 1/4 red onion, thinly sliced
- 1/4 c. sliced almonds, toasted
- FOR DRESSING
- 1/3 c. olive oil
- 3 tbsp. red wine vinegar
- 1 clove garlic or 1/2 shallot, minced
- 2 tsp. dijon mustard
- Kosher salt
- Freshly ground black pepper
Instructions
- In a medium bowl, whisk together all dressing ingredients until completely incorporated.
- Season with salt and pepper.
- Combine all salad ingredients in a large bowl.
- Add dressing, toss to combine, and serve immediately.
