Mini Baked Red Potatoes

Mini Baked Red Potatoes

Red potatoes are particularly healthy because of their thin, nutritious filled skins, which are loaded with fiber, B vitamins, iron and potassium. Half of the fiber of a potato comes from the skin.

It is good to include red potatoes in a healthy diet because they are naturally low in fat, have just 110 calories, provide 45 percent of the recommended daily intake of vitamin C, have more potassium than a banana, and are devoid of sodium and cholesterol!

Did you know that all potatoes contain carotenoids, a class of plant pigments that protect against chronic disease and inflammation. These red potatoes are an excellent choice for the diabetics. It is a common misconception to think that potatoes are mostly fat and calories. The truth is that potatoes are close to zero fat and cholesterol and are low in calories. They are loaded with vitamins, minerals and health benefits.
