Red potatoes are particularly healthy because of their thin, nutritious filled skins, which are loaded with fiber, B vitamins, iron and potassium. Half of the fiber of a potato comes from the skin.

It is good to include red potatoes in a healthy diet because they are naturally low in fat, have just 110 calories, provide 45 percent of the recommended daily intake of vitamin C, have more potassium than a banana, and are devoid of sodium and cholesterol!

Did you know that all potatoes contain carotenoids, a class of plant pigments that protect against chronic disease and inflammation. These red potatoes are an excellent choice for the diabetics. It is a common misconception to think that potatoes are mostly fat and calories. The truth is that potatoes are close to zero fat and cholesterol and are low in calories. Mini Baked Red Potatoes Recipe

Ingredients

  • Red potatoes
  • Chives
  • Ciboulette
  • Pink himalayan salt or Sea salt
  • Grassfed butter

Instructions

  • Wash and rince the potatoes. Put them on a baking sheet Sprinkle pink Himalayan salt all over.
  • Pre heat the oven at 450 degrees.
  • Then insert the baking sheet with the red potatoes in the oven. Bake for 30 minutes.
  • Check with a pointy knife. The skin should be crispy and inside feeling like mash potatoes. When ready, remove them from oven.
  • Let them cool down for a few minutes. With a pointy knife, cut like X on each potato, then cut little strip of organic grassfed butter that you are going to insert in each one of them.
  • When done , mince the bundle of chives with a sharp knife or scissors!
  • And sprinkle the chives over all the potatoes.✨
